Time when family gathers on a joint lunch; Time to prepare something tasteful in the kitchen and Wow your beloved ones with some delicious meal. Are you ready to get your feet wet?

1. Spinach & Mushroom Salad
- 1,5 kg baby spinach
- 2 cups mushrooms (sliced)
- 1 cup cherry tomatoes (halved)
- 2 onions (thinly sliced)
- ¼ cup bacon (optional; pre-cooked till crisp)
- Oil, Balsamic vinegar, Salt
Heat the oil in a large skillet and add the onions. Cook in medium heat around 5 minutes till the onion softens. Add the mushrooms and cook them together for 4-5 minutes until the liquid evaporates.
Now get a large salad bowl and place the spinach in it. Add the cooked veggies and then place the cherry tomatoes on top. Drizzle it with the dressing and mix it gently.
Faze 1 – DONE!
2. Spinach & Ricotta Cannelloni
- 300g baby spinach
- 500g ricotta cheese
- 150g parmesan cheese (grated)
- 16 tubes cannelloni
- 500g Tomato puree
- Olive oil, Basil, Salt & Black pepper
Mix the spinach, ricotta cheese, grated cheese (leave some to put on top), salt and pepper in a large bowl. Fill the cannelloni tubes with the mixture.
For the sauce, heat olive oil in a frying pan, add the tomato puree, basil, salt and black pepper, and bring to the boil. Just remove it from the heat now.
Grease an oven baking dish and put a layer of the red sauce as a base for the cannelloni, but leave enough to cover it also. Place a single layer of cannelloni side by side and pour the remaining sauce on top. Sprinkle the remaining grated cheese on top, cover with foil and bake in oven at 200°C for 25-35 minutes, removing the foil for the last 5 minutes.
Lunch is done. Carefully arrange the table and serve it with love!
