1-1/2 pounds Salmon fillet, cut into 4 equal portions
1/3 cup dry white wine (Chardonnay) or medium sweet wine (Riesling)
2 tablespoons low-sodium Soy sauce (Tamari)
1/3 cup orange juice (fresh squeezed)
3 tablespoons finely grated ginger
1/4 cup finely chopped green onions
1 tablespoon honey
1/2 teaspoon extra virgin olive oil
1. Rinse the salmon gently in water and pat to dry. In a small bowl combine the wine, soy sauce, orange juice, scallions and honey, and whisk to combine well. Place the salmon in a glass baking pan, skin side down, and pour the marinade on top. Cover the baking pan with a plastic wrap and put in the fridge for 4 to 6 hours, tipping the dish occasionally.
2.Get the baking pan out of the refrigerator and let it stand at room temperature for 30 minutes while you preheat the broiler. Take the salmon out of the pan and remove any ginger or scallions to prevent them from burning. On the skin side rub the oil and place it on the broiled pan, oiled side down.
3. Broil the salmon on high heat for 10 – 15 minutes until the flesh is firm and lightly pink. The top should lightly brown and caramelize. If the salmon browns within the first 5 minutes, make sure you move the broiling pan 1 rack down in your oven)
