Advanced Pancake BREAKFAST

The Ultimate breakfast is on it’s way!


  • 4 – 8 pancakes
  • 1.5 cup of roasted potatoes
  • 3 eggs, scrambled
  • 1 lb. of cooked bacon
  • 1 cup of whipped cream

For the top:

  • 1 cup of sliced strawberries
  • 1/2 cup fresh blueberries
  • 2 kiwi fruit
  • 1 bunch fresh mint leaves
  • Maple syrup, for serving

For the pancakes: 

  • 2 cups all-purpose flour
  • 2 ts baking powder
  • 1/4 ts salt
  • 1 tbsp sugar, optional
  • 2 eggs
  • 1 1/2 to 2 cups milk
  • 2 tbsp melted and cooled butter (optional), plus unmelted butter for cooking

  • 1 pound of small red potatoes
  • 2 tbsp olive oil
  • 2 cloves garlic, finely minced
  • 2 ts freshly minced parsley
  • salt & black pepper

Cut the potatoes into cubes and scatter them onto a baking sheet with the olive oil, garlic and parsley. Sprinkle a good pinch of salt and black pepper. Roast for 30-40 minutes, or until the potatoes are golden.

Scrambled eggs:

  • 3 large eggs
  • salt &pepper
  • 1 tbsp butter

Beat the eggs and season them with salt and pepper. Heat the butter in a large frying pan over medium heat. Add the eggs and gently stir to scramble. Once the eggs are done, remove them from the heat.

For the bacon: Lay the bacon slices on top of a bacon sheet and cook them for 10-15 minutes until crispy in a preheated oven to 400F.

Get a serving platter and lay the first pancake down on it. Add a layer of roasted potatoes all the way to the edge. Add another pancake and add the scrambled eggs. Add another pancake and add the bacon. Add another pancake on top. Spread a layer of whipped cream and arrange it with the strawberries, blueberries, kiwi and mint leaves. Serve it with maple syrup on the side if pleased.
